Nellikai Pachadi/Gooseberry Raitha/Amla Pachadi With Yogurt-Coconut Paste


Ingredients:-
Nellikai/Gooseberry/Amla –3-4 nos,medium size(I used frozen Nellikai)
Grated coconut - 1/2 cup
Green chilli - 2-3 nos
Mustard seed - 1/2 tsp
Curry leaves - 1 strand
Yogurt/Curd - 1/2 cup
Dried red chillis - 2-3 nos.
Salt
Oil


Directions:-
·         Pressure cooks the Nellikai with little water for 1-2 whistles and allows to cool. Discard the seed.
·         Grind grated coconut, cooked nellikai green chilli, salt with yogurt/curd. Pour this paste into a bowl.
·           Seasoning with mustard seed, red chilli,and curry leaves


Have with Rice

Butter Peas Masala Curry With Coconut


Ingredients:-
Butter Peas-250 gm. (I used Frozen)
Onion, chopped -1/2 cup
Tomato, chopped-1 medium
Grated coconut-1/2 cup
Garlic pods-2-3 nos;
Turmeric powder-1/2 tsp
Coriander powder-1 tbsp
Red chilli powder-1/4 tsp
Garam masala powder-1/2 tsp
Mustard seed-1/2 tsp
Curry leaves-1 strand
Coriander leaves for garnishing


Directions:-
·         Pressure cook butter peas with salt,turmeric powder with little water and keep it aside.

·         Meanwhile roast the coconut, 2 tbsp onion, garlic until coconut become brown in color.
·          Finally add coriander powder, red chilli powder, garam masala powder and roast for 1-2 minutes. Grind the above roasted coconut mixture with water and make a smooth paste.
·         Heat oil in a pan and add mustard seed,when start to spluttering add onion and sauté till onion become transparent.
·         Add the tomato, sauté for 2-3 minutes.
·         Add the ground coconut paste into mixture and sauté for 2-4 minutes.
·         Finally add the cooked butter peas and close the lid, cook it for 5-10 minutes.
·         Garnish with coriander, curry leaves.
  

Have with rice,rotti etc

Soya Chunks Masala Curry With Fried Coconut/Varutharacha Soya Chunks Masala Curry



Ingredients:-
Soya chunk- 1 cup
Onion cut into medium cubes-1/2 cup
Tomato,chopped-1 medium
Potato,cut into medium cubes-1medium
Grated coconut-1/2 cup
Garlic pods-2-3 nos;
Turmeric powder-1/2 tsp
Coriander powder-1 tbsp
Red chilli powder-1/4 tsp
Whole Black pepper-5-7 nos; or use pepper powder ½ tsp
Chicken masala powder-1/2 tsp
Curry leaves-1 strand
Coriander leaves for garnishing

Directions:-
·         Soak soya chunks into the hot water for 30 minutes.
·         Discard the water and squeeze the excess water off the soya chunk and keep it aside (I cut the soya chunks into two halves)
·          Pressure cook soya chunks with salt ,  little water and keep it aside.
·         Meanwhile roast the coconut, 2 tbsp onion, whole black pepper, garlic until coconut become brown in color.
·         Finally add coriander powder, red chilli powder, chicken masala powder and roast for 1-2 minutes.
·         Grind the above roasted coconut mixture with water and make a smooth paste.
·         Heat oil in a pan and add onion and sauté till onion become transparent.
·         Add the tomato, sauté for 2-3 minutes, and then add the potato cubes.
·         Add the ground coconut paste into mixture and sauté for 2-4 minutes.
·         Finally add the cooked soya chunks and close the lid, cook it for 5-10 minutes.
·         Garnish with coriander, curry leaves.

Have with pulavu,chappati...

Dry Gobi Manchurian/Dry Cauliflower Manchurian


Ingredients:-
Cauliflower florets-2 cup
For Dipping Ingredients:-
Plain flour-5tbsp
Cornflour-3 tbsp
Pepper powder-1/2 tsp
Coriander powder-1/2 tsp
Ginger-garlic paste-1 tsp
Salt
Water
Oil for frying

For Dry masala
Onion, chopped-1 big
Ginger, chopped- 1 tsp
Garlic, chopped-5 tsp
Green chilli, chopped-1-3 nos
Soya sauce-1-2 tbsp
Tomato sauce-2-3 tbsp
Kashmiri Red chilli powder/Paprika-1 tbsp
Coriander powder-1/2 tsp
Pepper powder-1/2 tsp
Vinegar-1 tbsp.
Sugar-1tbsp.
Salt
Oil
For Garnishing
Spring onion, chopped-3tbsp
Coriander leaves
Chat Masala-2 tsp.


Directions:-

·         Boil cauliflower florets in salt water for 3-5 minutes  drain all the water.
·         Make a thick batter use dipping ingredients.
·         Dip cauliflower florets in water and fry it till golden brown color. Keep it aside.
·         In the same oil, add chopped onion and fry until transaperent.Add the chopped garlic, ginger, green chilli and sauté for 3-5 minutes.
·         Add the all powders and soy sauce, tomato sauce, vinegar, sugar and salt sauté for a while
·         Add the fried cauliflower and combine well.
·         Make sure that florets are well coated with the sauce.
·         Garnish with spring onion and coriander leaves and sprinkle some chat masala over it before serving.


Serve with some fried rice, roti.

Mixed Vegetable Jalfrezy/Mixed Vegetable Gravy


Ingredients:-

Carrot, cut into length wise- ½ cup
Beans cut into lengthwise-1/2 cup
Green peas-1/4 cup
Garlic paste-1 tsp
Tomato chopped-1 medium
Onion, cut into big chunk-1 medium         
Capsicum – 1 medium(You can use red, it will make the curry more colorful)
            Green chilli- 2 nos,
            Cumin seed-1 tsp
            Red chilli powder-1 tsp
            Dried Fenugreek leaves- 2 tsp
            Tomato sauce-1/2 tsp
Garam masala powder- 1 tsp
Turmeric powder-1/2 tsp
Salt
Oil


Directions:-
·         Steam carrot, peas,beans (You can use any vegetables).

·         Heat oil in a pot
·         Add cumin seed, green chilli, onion,garlic and salt

·         Stir until onion become transparent
·         Add tomato and sauté till tomatoes are become mushy
.
·         Add all masala powder ,dried fenugreek leaves and tomato sauce.Mix well and cook for 2 minutes

·         Add all steamed vegetables, capsicum and paneer and mix with masala Add more salt if needed.

·         Cook for 5-10 minutes on low heat.


Serve hot with chapatis.

Vegetable Korma/Mixed Vegetable Korma



Ingredients:-
Green beans  cut into 1’ pieces- 1/4 cup
Carrots cut into cubes-1/4 cup
Potato cut into small cubes–1/4 cup
Cauliflower florets-1/4 cup
Green peas-1/4 cup
Tomato,chopped-1 medium
Onion chopped-1 medium
Cumin seed-1/2 tsp
Turmeric powder-1/2 tsp
Red chilli powder- ½ tsp
Coriander powder-1/2 tsp
Garam masala powder-1/2 tsp
Cloves-2-4 nos,
Cardamom-2 nos,
Cinnamon-1’ pieces
Bay leaf-2 nos,
For Grinding
Cashew nuts-15-20 nos,
Grated coconut-1/2 cup
Green chilli-3-5 nos,


 Directions:-
·         Take a pan add cumin seed, when start to spluttering add all whole garam masala and sate for a while.
·         Add the onion and sauté till it is become transparent. Add all masala powders and sauté for 2-4 minutes.
·         Add all vegetable (except cauliflower) with just enough water, turmeric powder and some salt cook till vegetables are done. Do not overcook.
·         Meanwhile grind cashews, green chilli,and coconut into smooth paste
·         Add the coconut paste, cauliflower, into the cooked vegetables.
·         Cover and cook on low heat for about 10-15 minutes. Or it become thick gravy.
·         Serve with rice or roti.

Spicy mushroom Gravy/Pepper-Red chilli Mushroom Gravy/Spicy Koon Gravy


Ingredients:-
 
Mushroom/Koon – 300 gm
Onion chopped -1 medium
Turmeric powder -1/2 tsp
Whole red chilli -4-6 nos,
Lemon juice -1-2 tsp
Pepper powder -1-2 tsp
Ginger –Garlic (Crushed)-2 tsp
Curry leaves -1 strand
Mustard seed -1/2 tsp
Oil- 2-4 tsp
Salt           

 

Directions:-

·         Grind whole red chilli with little water into coarsely paste.
·         Wash and cut the mushroom into medium size and keep it aside.
·         Take a pan and add oil, add mustard seed, when mustard seed start to spluttering add the onion and sauté till transparent.
·         Add crushed ginger-garlic, turmeric powder, pepper powder, ground red chilli paste, salt,soy sauce and sauté for 2- 5 minutes.
·         Add mushroom pieces, curry leaves into this mixture and mix well.
·         Sauté well and sprinkle water if needed. Cook till mushrooms are done.
·         Finally add the lemon juice and mix well.

Serve hot with chapatti or rice.

Chilli Mushroom Gravy (Chilli Mushroom)


Ingredients:-
Mushroom – 250 gm
Capsicum - 1/4 cup chopped


For the gravy sauce:-


Onion chopped – ½ cup

Soy sauce – 1 tbsp.

Tomato ketchup – 2 tbsp.

Paprika (Kashmiri red chili powder/red chili sauce) - 2tbsp

Coriander powder – 2 tsp.(optional)

White vinegar – 2tsp

Corn starch – 2-4 tsp

For garnishing:-

Spring onions - 1/4 cup chopped

Chopped coriander leaves – ¼ cup

Garlic chopped – 4-6 tbsp


Directions:-
·         Take a pan with little oil and add cleaned mushroom, salt and add pinch turmeric(optional) cook till all water evaporate.

·         Heat oil in a pan and add onion and sauté onions are become transparent.
·         Add tomato ketchup, soy sauce, red chili sauce/paprika and coriander powder cook until oil start to separate. 
·         Add the chopped capsicum.
·          Mix 2 tsp. corn starch with 3tbsp. water and add it to the above mixture .Cook for 5-7 minutes until sauce become thicken.

·         Add the cooked mushroom and cook for 5-10 minutes.

·         Finely add green onion and chopped garlic, coriander leaves ,1 tsp vinager and toss again for 2-3 minutes.

·         Serve hot with roti
