Angel Hair Pasta With Shrimp & Mussels


Ingredients:-
Angel hair pasta -8 ounces
Onion, chopped- 4-6 tbsp.
Garlic, chopped-4 tbsp
Plum tomato-1/2 cup
Dried oregano-1 tsp
Dried parsley-2 tsp
Minced clam juice-1/2 cup
Shrimp, cleaned & Devined-10-14 nos;
Mussels, cleaned-1/2 lb
Olive Oil-2 tbsp
Cooking wine-2 tbsp
Dried Basil leaves- 1tbsp
Salt


 Directions:-
·         Bring water to boil in a pot. Cook the angel hair pasta according to the instructions on the package.

·         Bring water to boil in a pot and add mussels. As soon as all mussels are open, transfer the pot to the sink and drain the water.Rinse the mussels with the cold water to get rid of foam. Set aside the mussels.
·         While boiling the pasta, heat up a deep sauté pan with olive oil. Sauté the onion and garlic for 2 minutes. Add the tomato, oregano, parsley; sauté for 2-3 minutes.Add minced clam juice with some salt and sauté for 5 minutes on lower heat.

·          Add mussels, shrimp and cooking wine; cook for 5-10 minutes.


·         Drain the cooked angel hair pasta and divide them equally into 3-4 serving.
·         Take out the above seafood mix and pour it on top of the angel hair pasta.
·         Garnish with dried basil leaves, and sprinkle some dried parsley flacks on the dish;

Serve immediately

Vegetable Minestrone Soup

Ingredients:-
Olive oil – 2 tbsp
Chopped onion – 1 medium
Chopped zucchini – 1/4 cup
Frozen Italian beans- ¼ cup
Minced celery- ½ stalk
Minced garlic- 2 tsp
Vegetable broth-4 cup
Red kidney beans, drained-1 can (15 ounce)
White beans, drained- 1 can (15 ounce)
Diced tomato – ½ can(14 ounce)
Shredded carrot-1/2 cup
Minced fresh parsley-1 tbsp
Dried oregano-1tsp
Ground black pepper-1/2 tsp
Dried basil – ½ tsp
Dried thyme-1/2 tsp
Hot water-11/2 cups
Spinach-3 cup
Small shell pasta – ½ cup

 Directions:-
·         Heat two tablespoons of olive oil over medium heat in a pot.
·         Sauté onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
·         Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and all spices.
·         Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
·         Add spinach leaves and small shell pasta and cook for an additional 20 minutes or until desired consistency.

Happy Valentines Day & Tiramisu Using Angel Food Cake

Happy valentines day to all my dear frinds.I made Tiramisu for this V' day..

Ingredients:-
Angel food cake – 10.5 oz
Mascarpone cheese – 80z
Strong espresso – 1 ½ cup
White Grape fruit juice – 5 tbsp (I don’t have Rum/Brandy so I used the juice.But the actual taste use rum or brandy.
Powdered sugar – ½ cup
Egg – 3 nos;                         
Chocolate powder for garnishing
Directions:-

·         First  separate the egg yolk and white. Beat the egg yolk with some sugar and make a smooth paste .
·         Add the mascarpone cheese and mix well using the beater.
·         Beat the egg white with an electric beater and beat until egg white become fluffy.
·         Add the fluffy egg white with the cheese egg yolk mix. Mix well until done.


·         In a small dish add the coffee and white grape juice (rum) .
·         Slice the cake into small equal size pieces and dip each into the coffee and place into the bottom of the baking dish.

·         Spread evenly ½ of the mascarpone mixture over the cake.
·         Arrange another layer of soaked bread and top with remaining mascarpone cheese mixture.
·         Cover the tiramisu with plastic wrap and refrigerate 2-6 hours.
·         Before serving sprinkle with chocolate powder.
