Strawberry - Banana Pancake Using Wheat flour and Jaggery


Ingredients:-
Wheat flour -1 cup
Banana-1 medium
Strawberry-4-6 nos;
Jaggery syrup-1/2 cup
Baking soda- a pinch
Milk-1/2 cup
Cinnamon powder-1/2 tsp


Directions:-
·         Puree banana and strawberry in a blender with milk.

·         In a large bowl mix together flour, soda and cinnamon powder mix well and add the banana strawberry puree into this mixture.

·         Add the jaggery syrup. Mix everything well.

·         Heat a griddle over medium high heat. Pour the batter onto the griddle, using approximately ¼ cup for each pancake. And cook until bubbles appear on the surface .Flip with spatula and cook until browned on the other side.

Serve hot

Undayum Kadalayum (Kadala Pidi)



Ingredients:-

Rice flour - 1 cup

Wheat flour - 1 cup

Black chick peas - 11/2 cup

Grated coconut - 1 cup

Garam masala - 1/2 tsp

Turmeric - 1 tsp

Red chilli powder - 1 tbsp

Garlic pods - 4 - 6 nos.

Mustard seed - 1 tsp

Urad dal - 1 tbsp.

Curry leaves - 1-2 strands

Oil
Salt

Directions:-
· Soak black chick peas over night in water.Cook till the peas are soft in a cooker.When the peas are cooked keep it aside.
· Add the rice flour and wheat flour in a large bowl,add ½ tsp salt and 1 tbsp oil.Add water into this mixture little by little and mix with hand,the flour comes together as a soft dough.Like chapatti dough.
· Apply some oil into the palms and form a small balls out of the dought and keep it in a plate.Repeat the process till all the dough is used up.

· Turn the heat to low,and put the cooked peas ,add garam masala,chilli powder,turmeric powder and mix well
· When it start to boil,at this point add the small balls.Keep covered and cook for 20-30 minutes,occationally stirring to keep balls separate.
· Mean while grind coconut,garlic and some curry leaves into coarsely.
· Now add the ground coconut ,mix well and cook at high heat with constant stirring till the mixture becomes almost dry with gravy thickly coating the dough ball.Remove from the heat.
· Heat 2 tbsp oil ,when oil is hot add mustard seed,mustard seeds start to popping add urad dal.Sauted till urad dals are become brown.
· Add curry leaves,when the leaves stop spluttering turn off the heat and add seasoning to the cooked dumpling mixture.
· Stir well to combine.Garnish with cilantro.

Fried Rice Upma/Arivarutha Upma


Ingredients:-
Par boiled rice/Puzhukkalari-1 cup
Jaggery powder-1/4 cup
Coconut ,grated-1/2 ucp
Water-1 cup
Salt-a pinch

Directions:-
·         Roast the rice till golden brown




·         Take a pressure cooker, add roasted rice, 1 cup water and add a pinch salt. Pressure cook on medium heat for 2 whistles. Allow to cool

·         Open lid and add powdered jaggery and grated coconut, mix well. Again put on medium heat for 3-5 minutes.
Have  with tea…



 You don’t like sweet version. You can add enough salt (1 tsp) instead of jaggery powder and make salty upma.

Fish Pathiri/Meen Pathiri/Fish filling Steamed Rice Cake


Ingredients:-
Fish Fillet/Fresh fish-1/2 kg
Onion, sliced-1 medium
Tomato, chopped-1 small
Ginger –Garlic,crushed-2 tsp
Turmeric powder-1/2 tsp
Coriander powder-1 tbsp
Red chilli powder-2 tsp
Garam masala-1/2 tsp (I used fish masala powder)
Coconut slices(Thenga Kothu)-2 tbsp
Curry leaves-1 strand
Fennel seed-1/4 tsp
Salt
Oil
For Pathiri
Rice flour- 1 cup
Cummin seed-1/2 tsp
Water-1 cup
Salt
Oil


Directions:-
For Fish Masala
·         Clean and cut the fillet into small pieces. Keep it aside.
·         Heat a pan with little oil and add fennel seed, add crushed ginger garlic sauté for 2 minutes.
·         Add onion and sauté till transparent. Add chopped tomato sauté till it become mushy

·         Add all powders and salt, curry leaves sauté for 2-4 minutes. And add coconut slices.
·         Add the cut fishes along with little water. Cook till fishes are done. Switch off flame and keep it aside.

Making Pathiri Dough
·         Roast the rice flour.
·         Boil the water with 2-4 tsp. oil. Add salt, cumin seed.
·         Add the rice flour slowly, stirring continuously.
·         Remove from heat and allow it to cool.
Filling Directions:-
·         Take a plantain leaf (or you can use aluminum foil / Parchment Paper) and spread a small portion of dough into the shape of pathiri.

·         Place fish masala on it.

·         Place another pathiri spread on another plantain leaf/aluminum foil/Parchment paper on this masala sealed the edges with fork.

·         Repeat the procedure for remaining dough and fish masala

·         Steam them till done

Steamed Rice Appam/Aviyil Venda Appam & Awards



Ingredients:-

Raw rice/basmati rice - 1 cup

Parboiled rice – 1 cup

Urad dal – 1cup

Water

Salt

Directions:-
·    

·         Soak raw rice,par boiled rice and urad dal for 5 to 8 hrs.
·         Grind soaked rice  with enough water .Batter shoul not be very thick or very watery.It shoul be in medium consistency.
·         Let the mixture sit for about 10 to 12 hrs in a warm place for fermentation. Add salt and mix.
·         Grease the plate /talli pour the batter over it .(I didn’t have talli so I put the banan leafe over the idly base).
·          Cook in the steamer for about 15-20 min.
·          When it cools cut it with knife .
Serve with coconut chutney

Kappa Puzhukku(Mashed Tapioca )



Ingredients:-

Peeled and diced tapioca (yucca root) – 1kg

Turmeric Powder – ½ tsp.

Salt

Water

For grinding:-

Grated coconut – ½ cup

Cumin Seed – ½ tsp

Green chilli – 2-4 nos.

Ginger – a small piece

Garlic pods – 4-6 nos,

Curry leaves – a few

For spluttering:-

Mustard seed -1/2 tsp

Chopped onion – 3 tbsp

Dried red chillies – 2

Directions:-

·       Cook tapioca in a pressure cooker, or in a vessel adding enough water, salt and turmeric powder till done.

·       Drain water if have more water.

·       Grind together coconut, cumin,garlic,green chilli,curry leaves in a coarsely paste.


·       Add the ground paste into the cooked tapioca and mix well.

·       Seasoning with mustard seed,onion,red chilies.

Serve hot with Meen Curry(Fish Curry)
