Egg Roast / Mutta Roast/Anda Roast


Ingredients:-
Egg hard boiled -3 nos;
Onion, sliced lengthwise-2 medium
Tomato -1 medium
Ginger, chopped-2 tbsp
Garlic pods-3-5 nos
Turmeric powder-1/2 tsp
Coriander powder-11/2 tsp
Garam masala/Meat masala-1 tsp
Pepper powder-1/4 tsp
Red chilli powder-1/2 tsp
Salt
Oil
Coriander leaves for garnishing

Directions:-
·         Make a puree of tomato, ginger, garlic using blender.
·         Take a pan and add 5 tbsp oil, add the onion and sauté till golden brown in color.
·         Add tomato puree and sauté until when start to leave oil.
·         Add all powders and salt, sauté till the gravy become dark in color.
·         Add the hard-boiled egg, simmer for 2-5 minutes.
·         Garnish with chopped coriander leaves.

 Serve hot with Appam

Egg Spinach Gravy (palak Anda Curry/Egg Palak Gravy)



Ingredients:-
Hard-boiled Egg – 3 nos,
Spinach – 1 bunch
Onion, chopped – 1 medium
Tomato, chopped - 1 medium
Red chilli powder – 1 tsp
Coriander powder- 1tsp
Turmeric powder – ½ tsp
Garam masala powder – 1 tsp
Cumin powder – 1 tsp
Dried methi leaves – 1-2 tsp
Ginger chopped – 1 tsp
Garlic chopped – 2 tsp
Green chili, chopped – 1 nos,
Cumin seed – 1 tsp
Oil
Water

Directions:-
·         Boil the egg, shell off and peeled and keep it aside.
·         Put a pot on heat with water and allow to boil, when start to boil add the washed spinach leaves, cook for a while and drain and allow to cool. Keep it aside.

·         Heat pot with 3 tbsp. of oil and add cumin seed, when start to sizzle add the chopped ginger, garlic, onion and green chilli and sauté till onion are become transparent.
·         Add tomato and cook until tomatoes are become mushy

·         Meanwhile grind the drained spinach into a smooth paste.
·         When tomatoes are done add all powders, methi leaves and sauté for 3 minutes .Add the spinach puree and mix it well. Add water on your consistency.

·         Cook for 5-10 minutes and add the peeled egg.
·         Again cook for 5-10 minutes.
·         Take a pan with 2 tbsp. of oil, when it’s become hot add spitted geen chilli, julienned ginger and fry for a minutes. Pour this into the egg palak.

Varutharacha Egg Curry



Ingredients:-


Hard boiled egg - 4 nos.


Onion chopped – 2 tsp

Onion sliced – 1 medium

Cloves – 4 nos.

Cardamom- 2 nos.

Garlic pods – 4 nos,

Red chili powder – 2 tsp

Pepper powder – 1 tsp

Turmeric powder – ½ tsp

Coriander powder – 2 tsp

Curry leaves – 1 spring

Fennel seed – ¼ tsp

Oil

Salt

Coriander leaves



Directions:-

·       Remove shell of boiled egg and cut into four pieces. Keep aside

·       Roast the coconut with chopped onion,cloves,cinnamon,cardamom garlic,some curry leaves,fennel seed till coconut turns brown color and add all powders with it.

·       Grind the above mixture into fine paste.

·       Heat oil in a pan and add onion and sauté till onion is transparent.

·       Then add the ground coconut paste and sauté for 5 minutes then add eggs.

·       Garnish with coriander leaves.
