Mushroom Manchurian/Koon Manchurian


Ingredients:-

Mushroom-6-10 nos;

For Dipping Ingredients:-

Plain flour-5tbsp

Cornflour-3 tbsp

Pepper powder-1/2 tsp

Ginger-garlic paste-1 tsp

Salt

Water

Oil for frying



For Dry masala

Onion, chopped-1 big

Ginger, chopped- 1 tsp

Garlic, chopped-5 tsp

Green chilli, chopped-1-3 nos

Soya sauce-1-2 tbsp

Tomato sauce-2-3 tbsp

Kashmiri Red chilli powder/Paprika-1 tbsp

Coriander powder-1/2 tsp

Pepper powder-1/2 tsp

Vinegar-1 tbsp.

Salt

Oil

For Garnishing

Spring onion, chopped-3tbsp

Coriander leaves






Directions:-

 
·         Clean the mushroom thoroughly (Wipe the mushroom kitchen paper, Washing with water, mushroom will absorb the water).


·         Make a thick batter use dipping ingredients. Dip mushroom in the batter and fry it till golden brown color. Keep it aside.



·         The same oil, add chopped onion and fry until transaperent.Add the chopped garlic, ginger, green chilli and sauté for 3-5 minutes.

·         Add the all powders and soy sauce, tomato sauce, vinegar, and salt sauté for a while. Add the fried mushroom and combine well.


·         Make sure that mushrooms are well coated with the sauce. Garnish with spring onion and coriander leaves.




              Serve with Fried Rice

Papaya Payasam/Omakka Payasam



Ingredients:-

Ripened Papaya /Kappalanga/Omakka– 1 medium
Jaggery -1/2 kg

Coconut milk,Thick-1 cup
Ghee -5 tbsp

Sliced coconut-1 tbsp
Kismis- 10-15

Cardamoom powder-1/2 tsp
Cashews-10-20


Directions:-

·         Cut and clean the papaya, and grind with a mixer to smooth paste.

·         Take a pan and add 1 tbsp of ghee, add the papaya pulp, sauté for 20-25 minutes on medium heat.


·         Melt jaggery with water and remove impurities, and add the jaggery syrup into the above papaya paste.

·         Add cardamom powder, stir continuously on low heat for 15-20 minutes.

·         Then add the coconut milk and stir well. When it start to boil switch off the flame.


·         Take a pan, add ghee, sliced coconut, cashews, kismis and sauté till golden brown.

·         Pour this mixture into payasam.

·         Garnish with some chopped papaya pieces.

Ragi Ladoo/Finger Millet Laddu


Ingredients:-
Ragi flour -1 cup
Ghee-1/2 cup
Sliced coconut-1/4 cup
Powdered Sugar-1/2 cup
Cardamom powder-1/4 tsp

Directions:-

·         Take a pan fry the sliced coconut with ghee till brown in color. Keep it aside.
·         In the same pan roast ragi flour, with 1-3 tbsp. of ghee for 15-20 minutes on medium heat. Add more ghee if needed.

·         Add the roasted coconut pieces.
·         Allow it to medium cool. Add the powdered sugar and cardamom powder.

·         Make a ladoo using your palm.
