Kerala Sambar Without Coconut



Ingredients:-

Toor dal - 1/2 cup
Plantain cut lengthwise 1 ½ ‘ pieces - 1/2 medium
Carrot cut lengthwise- 1/4 cup
Tomato - 1 medium
Potato cut into medium cubes- 1 medium
Drumsticks - 3 pieces
Onion - 1 big(use 6-10 nos shallot)
Mustard seed - 1/2 tsp
Hing - 1/4 tsp
Tamarind - gooseberry size ball(optional)
Turmeric powder - 1/2 tsp
Coriander powder - 1 tbsp
Sambar Powder - 1 tbsp(optional)
Dried red chilli powder - 1/2 tsp
Curry leaf - 1 strand
Oil
Salt




The choices of vegetables are purely according to each one's taste.

Directions:-

·         Cook dal with turmeric and enough water till done
·         Chop all vegetables in a medium size pieces.Pour all chopped vegetables into cooked dal with chopped onion, tamarind juice with 2 cups of water (soak tamarind in 1/2 cup of warm water for 5 minutes and squeeze the juice out of it).
·         Pressure cook for 1 whistle, release the pressure immediately.Heat oil in a large pan, add mustard seeds.
·         When the mustard seed crackle adds dried red chillies.
·         Add chopped onion or shallots sauté for minutes with curry leaves.
·         When shallot/onion become transparent reduce the heat add coriander powder,redchilli powder, turmeric powder,sambar powder fry till raw smell of the powders go.
·         Add cooked veg-dal mix into this masalas. Mix well and cooked for further 5 minutes.
          Finally add hing powder and remove from the heat.


Have with Rice
