Kakkirikka Pachadi (Cucumber Pachadi) with Coconut


Kakkirikka/cucumber - 1 large or 2-3 medium-
Grated coconut-1/2 cup
Green chilli - 3-4 nos.
Mustard seed - 1/2 tsp
Yogurt/Curd - 1/2 cup
Dried red chilli - 1-2 nos. splitted
Shallot - 1 nos. (optional)
Curry leaves - 1 strand


·         Wash kakkiri thoroughly and chop into small pieces with skin. Marinate cut kakkiri with salt. Keep it for 5-10 minutes.

·          Grind grated coconut, green chilli,2-3 nos. curry leaves shallot into smooth paste and finally add 1/2 tsp mustard seed and grind for another 2-3 seconds.
·         Add coconut paste to marinated kakkiri along with curd.
·         Finally seasoning with mustard seed, curry leaves dried red chilli.

Serve with rice
